- 2 tbsp. oil
- 1 flour tortilla
- 2 oz. shredded Monterey Jack cheese shredded
- 1 oz. chopped onion
- 1 oz. chopped green pepper
- 3 oz. cooked Pork Roll
- 2 oz. favorite spicy tomato base sauce (spaghetti, pizza or enchilada)
- Reserve enough cheese to sprinkle on top before baking
Cover the entire bottom of pan with oil and heat. Add the tortilla, cheese, vegetables, then pork roll.
Cook until the tortilla is browned evenly.
Fold the shell in half and move to a baking pan.
Drizzle tomato sauce on top then sprinkle with cheese.
Bake at 375 degrees until cheese is melted and the tortilla shell is brown on edges.
Garnish with chopped scallions and chopped peppers.
Serve with sour cream and sauce or salsa on the side.
