Stuffed Mushrooms with Taylor  Pork Roll

Taylor Pork Roll Stuffed Mushrooms

6 oz finely chopped, fried Taylor Pork Roll

12 – 15 Large Mushrooms – take off stems, wash, let drain
1 large onion
4 tablespoons Miracle Whip (if mayonnaise is substituted add 1 teaspoon vinegar or 1/2 lemon juice)
4 oz Shredded Sharp Cheddar Cheese

Pre-heat oven to 350 degrees. Fry Taylor Pork Roll till crisp, then chop fine.. Chop stems of mushrooms and sautee them in “juice” left over from Taylor Pork Roll until soft.

Mix porkroll, mushroom stems, onion, Miracle Whip, and cheese. Fill mushrooms and place on baking sheet. Bake for 20 to 22 minutes until cheese is bubbling.
